
Today I am beaming with pride after finally successfully making chicken stock from scratch. I have tried many times unsuccessfully, but it always tasted like, well, a carcass...
After boiling the chicken bones in water and onions for nearly 8 hours last night (and 2 hours again today) the taste was finally drawn out and then enhanced with salt, pepper, celery salt, garlic, and turmeric. The brimming stock was then used as my base for a corn chowder.
This past week has been a great adventure. After doing taxes I set up a budget (for fun which is the best part!) At the beginning of each month I will place a dollar amount on the grocery gift card and when it's gone, it's gone. My goal this past week has been using all of the extras in the cupboard, freezer, etc. We have actually had some of our most enjoyable meals this week as I view it as a game how delicious the meal can be with just what is already available that previously had been shrugged off.
Here is where the chicken comes in. For who knows how long there has been a whole chicken in the freezer. After roasting the chicken Monday (delicious!), the "leftovers" were made into chicken taco salad, a chicken gumbo like thing and chicken and veggies. Then after the meat was gone, I boiled the bones for soup. We have had the chicken every day since Monday, there will be enough soup for at least 2 more meals and the chicken only cost me $3.99 in the first place!
What we need next is a cow as basically the only things I purchased at a store this week were milk and yogurt. (The corn in the soup was from our garden last summer).
